Cheese Pie

like cheese cake, sort of. Try it.
Crust
11 ½ rectangles of graham crackers.
1/3 c sugar
pinch of salt
1/2 stick butter, melted
Blend all ingredients in a blender until fine. Pour into pie pan. Add melted butter, combining and patting to form to pan.
Filling:
12 oz. cream cheese, room temperature.
1 cup sugar
2 eggs
Mix and pour into shell. Bake at 350 degrees for 25 minutes. Allow to cool somewhat.
Topping:
I cup sour cream
3 tbs. sugar
½ teaspoon vanilla (I use more)
Mix and carefully layer on top of baked filling.
Bake an additional 5-10 minutes.
Best served very cold from the refrigerator.
