Aunt Judy's Refrigerator Rolls

2 pkgs active dry yeast
1/2 c warm water
1 tsp. sugar
1/2 c shortening
1/2 c sugar
1 egg
1 T salt
3 c warm water
2 1/2 lbs flour

Dissolve the yeast in the warm water with the teaspoon of sugar and let rise. In another bowl, cream together the shortening, 1/2 c. sugar, egg, and salt. Add the risen yeast to the bowl and combine. Add three cups warm water and 2 1/2 lbs flour. Mix and let rise. Punch down and let rise again. Punch down and refrigerate.
